Effect Of Different Concentration Of Zataria Multiflora Boiss Essential Oil On Vibrio Parahaemolyticus In Salted Fish Fillets At 8oc

Salted food products are popular worldwide. Vibrio parahaemolyticus is a foodborne bacterial pathogens that not eliminated by salting of fish. In this study antibacterial activity of Zataria multiflora Boiss essential oil (ZMEO) against Vibrio parahaemolyticus in salted silver carp fillets were investigate during 6 days at 8 oC. Results of this study showed ZMEO at 0.810 % concentration completely inhibited the growth of Vibrio parahaemolyticus. Also, the antibacterial activity of ZMEO was dependent to its concentration. The result of this study, can improve the scope of EO function in food industry.
